Zucchini Bread

Recipe by Sue Legassie

(yields 2 loaves)

 

2 cups flour (sifted)

1/4 tsp baking powder

2 tsp baking soda

1 tsp salt

3 tsp cinnamon

1/2 tsp Cloves

1/2 tsp nutmeg

3 eggs (beaten)

1 cup vegetable oil

1 cup sugar

2 grated zucchini

2 tsp vanilla extract

1 cup Chopped nuts (optional)

Combine first 7 ingredients. In mixing bowl combine eggs, vegetable oil, sugar, zucchini, and vanilla. Gradually add dry ingredients. Once combined add nuts. Bake in greased loaf pans for about 45 minutes at 350 degrees or until a knife inserted comes out clean.
