Strawberry Shortcake
½ cup softened butter
1 cup granulated sugar
½ cup buttermilk
2 eggs
1 teaspoon vanilla
1 ½ cups flour
½ teaspoon salt
2 teaspoons baking power
Whipped cream (optional)
Clean and wash strawberries and cut in ½ or bit size pieces. Add 2-3 tables spoons of sugar and let stand for at least 15 minutes
Meanwhile, preheat oven to 350 degrees, and lightly grease an 8 x 8 inch pan.
Beat butter and sugar until light and fluffy. Add buttermilk, eggs and vanilla. Mix well.
Using a colander or sifter, mix together flour salt and baking powder and sift into butter and egg mixture
Gently mix together until no clumps remain.
Bake 25-30 minutes or until a toothpick inserted comes out clean.
Cut into squares and serve warm topped with strawberry mixture and whipped cream.
